So as I’ve mentioned before, I don’t really like Thanksgiving leftovers. In an attempt to not be wasteful this Thanksgiving, I went on a search to find good Thanksgiving leftover recipes and found this one for BBQ Turkey and Celery salad. It looked super easy (and it was) and I had almost everything on hand, so I decided to make it. My husband also had found this recipe for Blue Cheese Stuffed Potatoes and had begged me to make it as soon as possible so I decided to add that to our dish as well. I have to say, this was one of the yummiest and easiest meals to make. I mean, for the turkey, all you do is dump BBQ sauce on it and warm it up. It doesn’t get much easier than that. One little change I made was with the roll–we hardly ever use rolls, and I didn’t feel like buying a whole package only to throw most of them out, so I served the BBQ on my favorite sourdough bread from Sprouts. It was perfect–a very successful Thanksgiving leftover meal.
